I intended to make a Lemon Meringue Pie inspired by the last Chief Inspector Gamache book I had read, but time got away from me. My own fault. The pie was being served as one of the desserts for a Friendsgiving gathering on a Friday night.
I got up and headed to my Exercise class. Then I decided to stick around for a yoga session. I was starving when those two classes were over, so I asked Amy to join me for lunch. When I got home I realized I had not left enough time to make the Lemon Meringue Pie. I quickly regrouped and made this Impossible pie. Impossibly easy, Impossibly quick, Impossibly delicious.
In this latest Gamache novel by Louise Penney, Myrna develops a love interest with a local handyman. He loves Myrna, and he loves Lemon Meringue Pie. Lemon Meringue Pie is mentioned numerous times in this novel in which Gamache is fighting against the clock to prevent a new drug from being introduced....a drug that he had allowed to be put out there when trying to break up the drug cartels. He was successful in that endeavor, however, not before the drug was released, and he lost track of it.
I really enjoy these novels and am nearing the end of this series. I will miss all my friends from Three Pines.
Hence, I chose Lemon Meringue Pie as my ending for a Hawaiian-themed Friendsgiving dinner and game night. I knew I wanted to stick with the lemon pie so I decided to throw together an impossible pie instead. I did top the slices with whipped cream as I served them, however, I forgot to take photos.
The slice pictured above was leftover and I had used all my whipped cream for the guests.

Impossible Lemon PIe
This lemon custard pie takes only a few ingredients and minutes to make before putting it into the oven. It is creamy, satisfying and delicious.

Ingredients
- 2 c. milk
- 3/4 c. sugar
- 1/2 c. baking mix (like Bisquick or Jiffy)
- 4 eggs
- 1/2 stick butter, melted and cooled
- 1 t. vanilla
- juice of 2 lemons
Instructions
- Place all ingredients in a blender in the order listed. Blend until smooth.
- Pour into a pie pan that has been treated with baking spray. Let rest while oven preheats.
- Bake in a preheated 350* oven for 40-45 minutes, until golden brown and center is set.

ReplyDeleteWendy, wow, what a quick pie recipe. Not impossible at all and with lemon, already am craving for it. Hubby is complaining that I have not made dessert in a while. So will be making this impossible lemon pie.
