Lemon and Lavender Cream Pie #SpringSweetsWeek

I served up this pie to my brother on his birthday.  Unfortunately when I peeled the plastic wrap from the top, it became dimpled.  However, it was extremely delicious and tasted much better than it looked so I decided that I was still going to share it with you today.

I used Nairn's Gluten Free Oat Grahams for the crust and flavored it with some lavender paste.  I prebaked the crust before putting in the filling and refrigerating it until I was ready to serve.  Lemon and Lavender are such a great flavor profile.  You are going to love this easy peasy pie.

Lemon and Lavender Cream Pie

Lemon and Lavender Cream Pie

This creamy lemon pie made with a combination of cream cheese and sweetened condensed milk poured into a graham cracker crust flavored with lavender is promised to be one of your next favorite desserts.

Ingredients

  • 1 (6 oz) pkg Nairn's Oat Grahams 
  • 1 T. sugar
  • 5 T. butter, melted
  • 1/4 t. lavender paste (I used T&C)
  • 1 (14 oz) can sweetened condensed milk
  • 1 (8 oz) pkg. cream cheese, room temperature
  • 2 t. lemon paste (I used T&C)

Instructions

  1. Place the crackers into a food processor and pulse until crumbs remain.  Add the melted butter, sugar and lavender.  Pulse until completely wet.  Pour into the bottom of a tart pan with a removable bottom that has been wrapped in aluminum foil.  Press onto bottom and up sides of tart pan.
  2. Bake in a preheated 350* oven for 8-10 minutes.  Remove and set aside to cool.
  3. Cream together the sweetened condensed milk and cream cheese until smooth. Stir in the lemon paste and beat until well combined.
  4. Pour into the crust.  Cover and refrigerate for at least 4 hrs. before serving.
