Rice Cooker Pancake #SundayFunday

Looking for a fun, unique way to make and serve pancakes?  These Japanese pancakes are made in a rice cooker!  They turn out fluffy, delicious and serve 4-8 people, depending on their hunger and any side dishes being served.  Try a slice for breakfast this morning.  You will be glad you did.

Rice Cooker Pancake

This recipe, well technique really, was introduced to us from Japan.  It is an easy way to get that incredible, fluffy, souffle like pancakes that everyone is raving about.

Pancakes are a popular breakfast choice around here.  Frank is normally the pancake maker and ends up standing at the stove cooking away making his Blueberry Pancakes or Chocolate Chip Pancakes as we all eat them faster than he can plate them.  

When I make pancakes I try to find recipes that we can all enjoy at the same time like these Oven Baked Tropical Pancakes, German Pancakes, Apfelpfannkuchen or this Crepe Cake.  

I'm also in charge when we are trying a new pancake or I am in one of my health conscious modes and want to boost the nutritional content like these Buckwheat Pancakes, Coconut Flour Pancakes, and these Brain Booster Pancakes

And I could go on for days with crepe like pancakes from all over the world.  You can enjoy Palacsinta from Hungary or these American style crepes made with Sourdough starter.

There are so many different possibilities that I'm surprised we don't have a National Pancake month instead of just a week!!

Rice Cooker Pancake

Rice Cooker Pancake

This recipe, well technique really, was introduced to us from Japan. It is an easy way to get that incredible, fluffy, souffle like pancakes that everyone is raving about.
Prep time: 5 MinCook time: 45 MinTotal time: 50 Min

Ingredients

  • 1 1/2 c. flour
  • 3 T. sugar
  • 1 T. baking powder
  • pinch of salt
  • 2 eggs, room temperature
  • 1 1/4 c. milk, room temperature
  • 3 T. butter, melted and cooled
  • 1/2 t. vanilla
  • Pure Maple syrup or toppings of choice

Instructions

  1. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  2. In a separate bowl or large measuring cup, whisk together the eggs, milk, butter and vanilla.
  3. Pour the egg mixture into the flour mixture and whisk just until combined.
  4. Pour the batter into the insert of a rice cooker that has been treated with cooking spray. Close the rice cooker and set for the white rice cycle. When cycle is done, check pancake for doneness by inserting with a wooden skewer that removes cleanly.
  5. Turn pancake out onto a serving plate and cut into 8 equal portions and serve with desired toppings.

  1. This is so clever, Wendy, and so much easier than traditional souffle pancakes! I cannot wait to try it. My rice cooker only has two settings, cook and warm so crossing my fingers it works!
