Winter Citrus Salad

Looking for a perfect start to your Valentine Day Dinner?  This marriage of sweet and bitter flavors in this salad is your answer.  Not only delicious but beautiful to behold.

This will make a wonderful first course for whatever else you are dishing up to show your love.....

I love using seasonal flavors and I have an affinity to bitter flavors, as well.  This mixture of citrus, red onions, feta, radicchio and endive melds together the bitter with the sweet and is different enough to add some pizazz to your meal.

All of those qualities remind me of relationships and that is what Valentine Day is all about. It inspired me to write this poem.  Yes, it was that good.  LOL.

Winter Citrus Salad

Winter Citrus Salad

Winter grapefruit and blood oranges contrast with the bitter flavor of radicchio and endive all wrapped together in a honey sweetened vinaigrette for a wonderful flavor profile and lovely presentation.

Ingredients

  • 1/4 red onion, thinly sliced
  • 1/2 c. olive oil
  • 1/3 c. red wine vinegar
  • 1 small shallot, minced
  • 1 t. honey
  • 1 t. Dijon Mustard
  • salt and pepper, to taste
  • 1 head radicchio, chopped
  • 1 head Belgian endive, sliced
  • 1 small grapefruit, segmented
  • 2 blood oranges, segmented
  • 3 oz. crumbled feta cheese

Instructions

  1. Place the onion in a bowl, cover with cold water and let set for 15 minutes.
  2. Combine the olive oil, vinegar, honey, mustard, salt, pepper and shallot in a small jar and shake until emulsified.
  3. Combine the radicchio, endive, grapefruit and orange sections in a bowl. Drizzle with a bit of the dressing and toss to coat. Drain the onions, pat dry and sprinkle on top along with the feta cheese. Drizzle with a bit more dressing and serve, passing the remaining dressing to be added as desired.

  2. Looks wonderful. In the past I have made a salad similar to your Citrus Salad , my recipe calls for sliced avocado's added to the grapefruit and orange slices and the thinly sliced onion. it is delicious. Love salads with oranges, grapefruit, apples, etc. I will have to try your posted recipe. looks delicious.
