I decided to take Rebekah's invitation both literally and figuratively.  So I made this salad that contains Hearts of Palm.  It also contains avocado which is a Heart healthy food.  Not too mention that it is very tasty so my husband's and daugther's Hearts were happy.

Hearts of Palm and Avocado Salad

This creamy, delicious salad tastes like it is a luxury but in reality it is a very healthy start to your meal, side dish or light lunch.

Ingredients

  • 1 c. cherry and grape tomatoes, asst. colors, halved
  • 1/4 sweet onion, thinly sliced into slivers
  • 1 (14 oz) jar hearts of palm, drained, sliced 1/2" thick
  • 1 avocado, cut into bite size pieces
  • handful of Italian parsley, chopped
  • juice and zest of 1 lime
  • 2 T. Miracle Whip
  • 2 T. Olive Oil
  • salt and pepper, to taste

Instructions

  1. Toss together the tomatoes, onion, hearts of palm, avocado and parsley in a salad bowl.
  2. Whisk together the Miracle Whip, lime juice and zest, and olive oil. Season with salt and pepper.
  3. Pour over the salad, toss, gently, to coat and serve.

  1. Wendy, after reading you post, listened to the song. Heart of palm is what is sold in Mombasa sometimes as street food. It is usually cut into thin strips and enjoyed raw. Next time will use them for a salad.

Toss together the tomatoes, onion, hearts of palm, avocado and parsley in a salad bowl.
Whisk together the Miracle Whip, lime juice and zest, and olive oil. Season with salt and pepper.
