Roasted Chicken with Greek Salsa #SundayFunday

Lean, nutritious, boneless, skinless chicken breasts sauteed in heart healthy olive oil and then roasted to perfection. Topped with a Greek salsa that is chock full of antioxidants from the parsley and oregano and heart healthy, cancer fighting tomatoes, beets and olives this dish is gorgeous to look at and so tasty your family won't even realize how good it is for them.

I am hosting Sunday Funday this week and to celebrate the arrival of 2021 and help kick the pandemic filled 2020 to the curb, I have asked the others to share recipes to help us stay healthy in this New Year.

Roasted Chicken with Greek Salsa

This theme couldn't have come at a better time for me.  My husband, Frank, suffered a mild stroke this past Monday.  This stroke was caused because his blood pressure got so dangerously high.  We are so blessed that the damage was not worse than it is and that the doctors expect a full recovery.  They have tweaked his meds in an attempt to better control his blood pressure.  I'm going to tweak his diet and start forcing him to take walks and get some exercise with me.

That's going to mean a lot more color in our foods....we will be eating a rainbow every day.  It means more lean protein like fish, chicken breasts, beans and legumes and less beef and pork.  This isn't going to thrill him but he will adjust.  

According to an article in Active Beat, foods that can lower the risk of stroke are dark chocolate (moderately), citrus fruits, whole grains, peanuts, sweet potatoes, garlic, coffee, tomatoes, fish, oatmeal, black beans, bananas, and cheese (small amounts).

These are foods that are constantly in our household and on our table so he should be able to find enough to make up for the lunchmeats, hot dogs, beef and pork that are going to appear a lot less frequently than they have in the past.

Roasted Chicken with Greek Salsa

Roasted Chicken with Greek Salsa

Lean, nutritious, boneless, skinless chicken breasts sauteed in heart healthy olive oil and then roasted to perfection. Topped with a Greek salsa that is chock full of antioxidants from the parsley and oregano and heart healthy, cancer fighting tomatoes, beets and olives this dish is gorgeous to look at and so tasty your family won't even realize how good it is for them.

Ingredients

  • 2 (6-8 oz) chicken breasts
  • 1 T. olive oil
  • salt and pepper to taste
  • 1/4 lemon, cut into 2 wedges
  • 4 small new potatoes, halved
  • 1 t. olive oil
  • 2 oz. feta cheese, crumbled
  • half pint grape tomatoes, halved
  • 1 beet, roasted, peeled and diced
  • 10-12 Kalamata olives, pitted and halved
  • 5-6 sprigs parsley, stemmed and chopped
  • juice of 1/4 lemon
  • 2 T. olive oil
  • leaves from 2-3 stems oregano

Instructions

  1. Heat 1 Tablespoon olive oil in a cast iron or oven safe skillet over med high heat.  Season the chicken breast with salt and pepper.  When oil is hot, place the chicken top side down into pan and sear until browned.  Turn the chicken over, squeeze the juice from 2 lemon wedges over the chicken and add the lemon wedges to the pan.
  2. Toss the potatoes with the 1 teaspoon olive oil, season with salt and pepper and scatter in the pan with the chicken breasts.  Place in a preheated 450* oven for about an hour, until an internal temperature of 165* registers.
  3. While chicken bakes combine the cheese, tomatoes, beets, olives, parsley, lemon juice, olive oil and oregano in a bowl.  Refrigerate until ready to serve.
  4. When chicken is done plate and top with the salsa.  Serve along with the roasted potatoes.
