The minute I received this lovely bag of pecan pieces from Millican Pecan Company, I knew I wanted to make pecan crusted cutlets of some sort. Since I had already planned to share a pork recipe for this event, I decided to go with chicken cutlets.
Not only did Millican Pecan Company send the bloggers product to use in creating Fall recipes but they also are generously sending the awesome gift package you see above to one of our lucky readers.
Our Teen, who was not raised by us and has a very undeveloped palate actually ate 2 of these cutlets for dinner. I served them up with roasted potatoes, steamed broccoli and my husband and I enjoyed a glass of Merlot with dinner. This is the perfect Fall meal. The kind of meal you start yearning for when the leaves start to turn and the weather cools.
This meal comes together quickly so it is perfect for a weeknight meal but still fancy enough to serve to company.

Pecan Crusted Chicken with Pears

Tender chicken breast meat coated with pecans, sauteed to a golden brown are served up with poached pears in a scrumptious sauce. This is fall food at it's finest.
ingredients:
- 2 lg. boneless, skinless chicken breasts
- 1/4 c. flour
- 1/4 c. pecan pieces, I used Millican
- salt and pepper, to taste
- 3 T. butter, divided
- 1/4 c. sherry
- 1 c. chicken stock
- 1 lg. Bosc pear, peeled, cored and cut into 1/2" slices
- 1/3 c. brown sugar
instructions:
How to cook Pecan Crusted Chicken with Pears
- Place the chicken breasts into a gallon size plastic bag, and pound with a meat mallet, rolling pin or heavy skillet until about 1/2" thick. Remove from bag and cut each breast into 2 or 3 cutlets.
- Place the pecan pieces into a food processor and pulse until mostly fine crumbs, some larger pieces are ok. Mix the pecans, flour, salt and pepper in a plastic bag. Add the chicken cutlets and shake to coat.
- Melt 2 Tablespoons of the butter in a large skillet placed over med high heat. When melted, add the cutlets and cook until golden brown on each side, about 3 minutes per side. Remove to a plate and set aside.
- Pour the sherry into the skillet and cook, scraping up any browned bits stuck to the bottom of the pan, until reduced by half, about 2-3 minutes. Add the chicken broth, brown sugar, and remaining butter to the skillet, stir to combine and melt the butter. Add the pear slices and cook for a couple of minutes, until they start to soften.
- Return the chicken to the skillet and bring sauce o a boil. Reduce the heat, cover and simmer for about 4-5 minutes per side, until an internal temperature of 165* is reached.
- Place chicken and pears onto a serving platter and ladle the sauce over all.
