BBQ Goat Stew in an Instant Pot
Pull out your Instant Pot and in a short time you will be enjoying a tender, flavorful stew from Zimbabwe. I used goat as is traditional for the area but this would be just as good with lamb or beef if you prefer.
Prep time: 5 MinCook time: 50 MinTotal time: 55 Min
Ingredients
- 1 lb. Goat Stew Meat
- 1 t. mild curry powder
- 1 t. garlic powder
- salt and pepper, to taste
- 1 T. oil
- 1/2 sweet onion, diced
- juice of 1/2 lemon
- 2 tomatoes, diced
- 1/2 c. BBQ sauce of choice
- 1 chicken bouillon cube
- 2 c. water
Instructions
- Season the stew meat with curry powder, garlic powder, salt, and pepper. Set aside.
- Heat the oil in the insert of an instant pot to saute setting. When hot, add the seasoned meat and cook until browned on all sides.
- Add the onion and lemon juice and cook until onion is softened, scraping up any browned bits stuck to the bottom of the pan.
- Add the tomatoes, bbq sauce, and chicken bouillon cube. Cook and stir for a few minutes and then cancel the saute setting.
- Add the water to the pot, seal the pot, and press the stew/meat setting. Lessen the cooking time to 50 minutes. When cooking is done, carefully release the pressure.
- When pressure is released, open the pot, stir, and serve.

I don't actually know where to get goat locally! This looks so good though.
