Pasta Salad with Chicken and Peaches

I used a rotisserie chicken for this salad but it is also a great way to use leftover chicken if you have it.  I served it for dinner one night for 4 of us.  Lunch for 4 the following day, and as a side salad with grilled sausage sandwiches for 6 of us.  It makes a lot of salad.

Pasta Salad with Chicken and Peaches

Pasta Salad with Chicken and Peaches

This salad is filling, flavorful, and beautiful. It takes only minutes to make but it is best served chilled. It is a great dish to bring to your next potluck or picnic.

Ingredients

  • 1 lb. pasta, cooked per package directions and rinsed in cold water.
  • 1 rotisserie chicken, bones, skin, and gristle removed, meat shredded
  • 1 c. frozen peas
  • 1 stalk celery, diced
  • 8 oz. cheddar cheese, diced
  • 10-12 basil leaves, chopped
  • 2 lg. fresh peaches, pitted and cut into bite-size pieces
  • 1/2 c. mayonnaise
  • 1/2 c. Miracle Whip
  • 1/2 c. sour cream
  • juice of 1 lemon
  • salt and pepper, to taste

Instructions

  1. Place the chicken, pasta, peas, celery, cheese, basil and peaches into a large bowl.
  2. Whisk together the mayonnaise, Miracle Whip, sour cream, and lemon juice. Season with salt and pepper.
  3. Pour over the pasta ingredients and gently fold to coat.
  4. Chill for at least 2 hours before serving.
