Sticky Chicken and the Weekly Menu

This quick, easy, delicious Sticky Chicken is ready in less than half an hour, making it perfect for a busy weekend meal.

Sticky Chicken with Quinoa Salad

I served it with a side of Asian Quinoa Salad . It got a big thumbs up of approval from my family.

I can't believe it is already Labor Day Weekend. This was a fast summer!!! We plan to enjoy our last hurrah by having an al fresco dinner with friends before attending an outdoor concert.  

Tomorrow, we will go to our local art fair on the water and then head over to a neighboring town that is also having an art fair. Our daughter and son-in-law have a booth at the second fair selling their Petoskey and Pine products. We will be taking them out to dinner after the fair.

I'm praying for nice weather on Sunday so we can enjoy another day relaxing in the pool. On Labor Day, Amy and I are going on the Annual Trestle Walk after which our neighbors are coming over to enjoy the pool and have dinner.  

On Wednesday, Frank is scheduled for surgery on his hand. The rest of the week's activities will depend on how he feels afterward.

Sticky Chicken

Sticky Chicken

This quick, easy, delicious Sticky Chicken is ready in less than half an hour, making it perfect for a busy weekend meal.

Ingredients

  • 1/4 c. soy sauce
  • 2 T. hot honey
  • 1 T. brown sugar
  • 2 t. ginger paste
  • 2 cloves garlic, minced
  • 1 1/2 lbs. boneless, skinless chicken breast, cut into 1/2" strips
  • 1 T. canola oil

Instructions

  1. Whisk together the soy sauce, honey, sugar, ginger, and garlic. Set aside.
  2. Heat the oil in a wok over medium heat. Add the chicken and cook, stirring, until browned, about 2-3 minutes.
  3. Pour the sauce over the chicken, bring to a boil, lower heat, and simmer for about 10 minutes, until the sauce thickens and the chicken is thoroughly cooked.
