Tomatoes are in peak season right now and my basil plants are going crazy. This pasta was a great way to use up some of that bounty filling up my countertop.

Mediterranean Pasta
Pasta tossed with garden fresh tomatoes, fresh basil, pine nuts, and feta cheese. A quick, delicious, warm meatless main meal in less than half an hour.
Prep time: 10 MinCook time: 10 MinTotal time: 20 Min
Ingredients
- 1 T. olive oil
- 1/2 vidalia onion, diced
- 2 cloves garlic, minced
- 1/2 c. pine nuts
- salt and pepper, to taste
- 4 tomatoes, seeded and diced
- 1 lb pasta of choice, cooked per package directions
- 1 c. crumbled feta cheese
- 8-10 basil leaves, chopped
Instructions
- Put the pasta into a large pot of salted boiling water and cook per package directions.
- While pasta is cooking, heat the oil in a large skillet. Add the onions, garlic, and pine nuts. Cook until fragrant and onion is softened. Add in the tomatoes. Cook for a minute and then add the cooked, drained pasta, cheese, and basil.
- Stir to coat and transfer to a serving dish.
