Wednesday Words

Yesterday nothing went according to plan.  Not from the moment we awoke until we finally fell into bed.


Yep, This is the kind of day we had.

As a result, my dinner party was canceled and we ordered in pizza and chicken for dinner.  I missed my lunch with my friend, Cathy, who was down state for the day, I missed zumba class and my posts were minimal.  I did mark in my food intake on my Quest for Fitness but it was a very abbreviated post and I spent 5 minutes on my 31 Day Challenge.

Today we were originally supposed to fly a couple to Mackinac Island but that has been canceled. Ting is going to apply for a job today so I will have Little Miss all to myself for a couple of hours.
Mary has lunch plans with some of her friends and Larnzy is getting together with our brother, Gary, for a few hours.

2014 Cookie Swap Sign ups #fbcookieswap


My friend Camilla, of Culinary Adventures with Camilla, posted today about a cookie swap hosted by Love and Olive Oil and The Little Kitchen.  Not only are we going to have an opportunity to try a lot of wonderful cookies but we also get to help Kids with Cancer.  The bloggers are partnering with Cookies for Kids Cancer.  Participants agree to donate $4 to the foundation and sponsors are matching our donations.  This is a win win proposition for every one involved.  You can learn all about it and sign up right here.

Musings on Monday

I had planned on getting up early and heading to the gym for Boot Camp Class but that didn't happen so here I am enjoying a leisurely morning.  I am on my second cup of coffee and I thought that I would catch up with you all since I didn't post, other than my 31 Day Challenge, yesterday.  Speaking of my 31 Day Challenge, are you enjoying it?  I really need some feedback.  I have gotten some good comments but they mostly are from people who love me so I don't know how honest they are LOL.

I did another post yesterday for an upcoming event called Food and Wine pairing.  Everyone will be posting their recipes and wine choice on October 11th.  I created a new recipe for this event and it turned out very well.

I served it during a dinner party we had last night.  Lots of dinner parties in this household because Larry and Mary are in from California.


I had to get in my baby time before Amy arrived.


Because I knew once she got here that baby would become hers.


Dinner commenced with prayer as soon as Frank was done capturing our memories.

It was a wonderful evening.  Tonight we have no dinner parties planned but tomorrow night Kim and Kurt will be over and, hopefully, John and Kirsten too.  Kirsy has been sick but I am hoping the antibiotics kick in and she is better by tomorrow. 

Today is Meatless Monday but, once again, you are going to have to wait for the recipe because it will not be revealed until Pumpkin Week later this month.  It is a keeper though so make sure you stop back by to see it.

Finally settling down on Saturday

It was a very full day today.  I got up early and made some cookies....mmmmmm were they delicious and I am going to share the recipe with you later on this month.  Stay tuned for it because these cookies were definitely keepers.

Then I started making Minestrone Soup for lunch today.  Frank went to go get his Mom and Larry ran to the store to get sandwich makings.  Mary's sisters and their husbands arrived and visited for a while.  A short time later, my brother, Dick, arrived and then shortly after that my sister, Dawn, and her son, Jacob, arrived.  We ended up having 12 for lunch today.  Luckily I had plenty of food.



I kept it easy and had a soup and sandwich buffet.  


When lunch was completed we straightened up, got the rub on the ribs and Dick, Dawn, Jake and Mary's brother in law, Ken, all left.

Frank and I went to pick up some late season corn to serve with dinner tonight and then headed to Mass.  When we got home from Mass it was time for round 2.  We only had 8 for dinner so we ate upstairs and then sat and visited for a few hours.

Now the house is straight, we are in our night clothes, Michael Buble is on the stereo and I have a glass of wine.  Life is good!!  Mary's sister, Pat, is spending the night.  Frank is taking his Mom home and tomorrow morning we are meeting Mary's other sister and her husband for breakfast before they head home to the west side of the State.

Fish Friday...just not at home and the Weekly Menu.

We had a great day today.  We went out to lunch and then to the RV show where we spent a couple of hours looking at all the different options available.  There was one at the show that was on sale for $610,000.00!  I mean seriously....who would ever spend that much money for an RV?

After the RV show we stopped and visited with Mom and then we met Dick and Jackie at Adair Bar for Perch Dinner.  They only serve the perch dinners on the weekend and they are always packed.

Tomorrow Mary's sisters and their husbands will be spending the day with us.  I am serving sandwiches and salads for lunch before Frank and I have to go to Mass and then we are grilling ribs when we get home for dinner.

Sunday, Amy and Doug are joining us for dinner.

On Meatless Monday I am making a special dish for Pumpkin Week that begins October 20th so you will have to wait until then to see what I am making.

For Try it Tuesday, Kim and Kurt are joining us for dinner.  I am making a recipe from a cookbook that Mary bought for me while we were in NYC,

Wednesday we may be flying a couple to Mackinac Island again, weather permitting, so no dinner scheduled...we will play it by ear.

Thursday is choir night so an early dinner beforehand.

Friday we have been invited to dinner at Dick and Jackie's.

Things I am Thankful for Thursday

Last night we celebrated Larry and Mary's homecoming with dinner.  Dick and Jackie came and so did Tingting and Melody.  Ting and Melody stayed the night so I got baby cuddles before bed and first thing this morning.



I weighed in this morning and have lost 5.4 lbs so far which means I am right on task for my goal.

Jackie and I went to Zumba class and then we met everyone for lunch afterwards.  Even Mom who was broken out by Larry and Mary today.



After lunch I got more baby time while Ting showered before we took her home. We got her settled in and straightened the house a bit and then I ran a couple of errands.  Frank made Chicken Pot Pie for us while we were gone.  He did a great job.

Now we are off to choir practice.  I hope you all had a lot to be Thankful for as well.

Caramel Apple Pretzels for Foodie Extravaganza

I have joined a new fun group on facebook called Foodie Extravaganza.  Each month the host chooses a theme and the rest of us create recipes to go along with the theme chosen.  Well here, Let me just share this with you:

Welcome to the Foodie Extravaganza!

This month the ingredient is pretzels with an optional ingredient of caramel.  Yes, October is National Pretzel Month along with a whole array of other delightful things!! Get excited!! Now you know me....I could not resist joining this group.  I do love my cooking challenges.  They make me smile.

I made pretzels for the first time last week as part of the #10DaysofTailgate Challenge.  I was surprised at how relatively easy making soft pretzels is and I was very pleased with the recipe that I used from Slow Roasted Italian.  I am using the same pretzel recipe today but adding to it so I can get into the theme of our Fall Inspired Extravaganza.


As you saw in my Day 4 post I warmed the beer to between 110-120*


 I added some yeast and honey and let it get nice and foamy before adding the flour and salt.


Except this time when the dough was done kneading, I added 2 apples, diced small, and sprinkled with cinnamon and sugar.
I continued allowing the dough to knead to incorporate the apples.
I needed to add quite a bit more flour to adjust for the moisture from the apple mixture.
I kept adding a tablespoon at a time until it reached the right consistency.


Turn the dough out onto a clean, lightly floured counter.


Cut off a hunk and, using lightly floured hands, roll into a strand.
If the apples pop out just keep rolling and they will go back in.


Shape the strand into a pretzel shape.
Drop into the boiling water and cook until it rises to the surface.
Remove from water, using a spider or a slotted spoon.


Place onto a parchment lined baking sheet.
Brush with egg wash and sprinkle with kosher salt.
Bake at 450* for 13-15 minutes.


When they are done baking drizzle with your favorite caramel sauce.


Allow to cool, remove to a serving platter and enjoy.

Caramel Apple Pretzels

12 oz. beer, warmed to between 110-120*
2 1/4 t. active dry yeast 
2 T. honey
3 1/4 c. unbleached all purpose flour
1 t. kosher salt
2 apples, peeled and cut into small dice ( I used Honey Crisp apples)
1 T. cinnamon/sugar mixture (made from 1/2 c. sugar and 1 t. cinnamon or you can use store bought)
1/2 c. baking soda
1 egg
Kosher salt for sprinkling
Caramel Sauce for drizzling--I used Sanders which is a local company.

Pour warmed beer into large bowl of stand mixer fitted with dough hook attachment.  Sprinkle with yeast, stir in honey and let set for 5-10 minutes until nice and foamy.

Place diced apples into a small bowl and sprinkle with cinnamon sugar, shake to combine.

While waiting for the yeast to proof, fill an 8 qt. pot with water and bring to a boil, lower heat to medium.  In a small bowl beat egg with 2 T. of water and set aside.

Add flour and salt to mixer and knead for about 3 minutes until dough comes together into a ball. Add the apple mixture and continue to need adding additional flour, one tablespoon at a time as needed until dough is tacky but not sticky.  It took quite a few tablespoons to get to the proper consistency. Turn dough onto a clean, lightly floured, countertop.

Cut a piece of dough off and using lightly floured hands roll into a strand about 14-16" in length.  Form the strand into a pretzel shape.  Continue until all dough is formed into pretzels.

Carefully add the baking soda to the boiling water, it will foam up and then settle down.  When the water returns to a medium boil with no foam, add the pretzels, one at a time, for about 30 seconds or until they float to the top.

Remove from the water to a parchment lined baking sheet.  Do not allow to touch each other.  When all pretzels are on sheet, brush with the egg wash and sprinkle with kosher salt.  Bake in a preheated 450* oven for 13-15 minutes.  

Drizzle with caramel sauce.  (You may have to warm the sauce if it has been refrigerated) Allow to cool before serving.
