I think this would also be a fun dish to serve up to your family for an April Fool's Day prank or as a cute start to an Asian Dinner.
I filled mine with Prosciutto and Asparagus and Smoked Salmon but the possibilities are endless. Open your fridge and get creative.

Crepes Sushi
These fun little appetizers are fun to make, serve, and eat. Tender crepes spread with Boursin Garlic Chive cheese and stuffed with Savory Fillings cut into bite-size pieces to look like a Sushi Roll.

Ingredients
- 4 crepes (store-bought or homemade)
- 1 pkg. (5 oz) Garlic Chive Boursin Cheese (room temperature)
- 4 asparagus spears, blanched
- 4 slices Prosciutto
- 4 oz. Sliced Smoked Salmon
Instructions
- Spread each crepe with 1/4 of the cheese.
- Lay 2 slices of Prosciutto onto 2 of the crepes. Top with 2 of the Asparagus spears. Roll into a cylinder, using a bit of the cheese to seal the edge.
- Layer the Smoked Salmon onto the other 2 crepes. Roll and seal.
- Place seam side down onto a cutting board and use a serrated knife to trim the edges and cut each roll into 6 equal pieces.
- Arrange onto a platter and serve.

Now why didn't I think of this?!? They look delicious. And I almost always do savory crepes, even when I am serving them to my family with whipped cream and jam.
