Cinnamon Pear Muffins
Ingredients
- 1 c. flour
- 1/2 c. sugar
- 1/2 t. baking powder
- 1/4 t. baking soda
- 1/4 t. cinnamon
- pinch of salt
- 1/4 c. butter, melted and cooled
- 1 egg
- 1/2 t. vanilla
- 2 T. milk
- 1 pear, peeled, cored and cut into small dice
- Cinnamon Sugar for sprinkling
Instructions
- Combine the flour, sugar, baking powder, baking soda, salt and cinnamon in a medium bowl.
- Whisk together the butter, egg, vanilla and milk. Pour into the dry ingredients and mix just until combined. Fold in the diced pear.
- Divide the batter between 6 muffin cups that have been liberally treated with baking spray. Sprinkle with cinnamon sugar.
- Bake in a preheated 375* oven for 20 minutes, until golden brown and a skewer inserted removes cleanly.
- Let cool in pan for 5 minutes before turning onto a cooling rack.

SO jealous of your pear trees! We're hoping to put in 2 and then 2 or 3 apple varieties soon. The muffins look awesome!
ReplyDeleteI have 2 that we put in a few years ago, along with 2 apple trees, one of which didn't make it and a plum tree. Finally got some pears from one of the trees this year. Maybe next year the apple and plum tree will join in the fun.
