Salt and Vinegar Roasted Potatoes

Are you a fan of Salt and Vinegar Potato Chips? If so, today is a happy day for you because I'm sharing a Roasted Potato Side Dish with all the flavors you love.

Ingredients

  • 2 lbs. red new potatoes, cut into halves or quarters,depending on size
  • 1 T. olive oil
  • 1 T. red wine vinegar
  • salt to taste

Instructions

  1. Whisk together the oil, vinegar and salt in a large bowl.
  2. Add the potatoes and toss to coat. Spread onto a baking sheet that has been lined with parchment or a silicone mat.
  3. Bake in a preheated 425* oven until golden brown and tender, about 20 minutes.
