This is our final Holiday Side Dish post for the year.  The salad I am sharing would be a perfect start for your Holiday Dinner.  I served it up for a Mardi Gras gathering that I had because of the purple, green and gold colors that represent Justice, Faith, and Power that represent our King and Lord, Jesus Christ, celebrated as the Christian season of Lent begins.

The recipe I'm sharing includes homemade poppyseed dressing to be passed with this salad but feel free to use store-bought or another dressing if you prefer.

Purple Cabbage Salad with Oranges and Pecans

This colorful, delicious salad features seasonal produce. It is the perfect starter or side for your Holiday Dinner Table.

Ingredients

  • 1 head purple cabbage, shredded
  • 3 navel oranges, peeled and cut into slices
  • 1/3 c. pecans, toasted
  • Handful of parsley leaves, chopped
  • 1/2 c. Miracle Whip or Mayonnaise
  • 1/3 c. sugar
  • 1/4 c. milk
  • 2 T. white vinegar
  • 1 T. poppy seeds

Instructions

  1. Line a platter with the shredded cabbage, arrange the orange slices on top and scatter the pecans over all. Sprinkle with the parsley.
  2. Whisk together the Miracle Whip, sugar, milk, vinegar, and poppy seeds. Serve alongside the salad for people to dress as they desire.
