Roasted Sunchokes, Potatoes and Mushrooms
Ingredients:
- 1/2 lb. baby dutch potatoes (I used Melissa's)
- 1/2 lb. sunchokes, peeled (I used Melissa's)
- 8 oz. whole white mushrooms, halved if large
- 2 T. olive oil
- salt, pepper and Italian herb seasoning, to taste
Instructions:
- Wash and dry the potatoes and mushrooms. Place in a large bowl with the peeled sunchokes, cutting as necessary so all vegetables are close to the same size.
- Add the olive oil, salt, pepper and Italian Herbs, if using. Toss the bowl a few times to coat all the vegetables.
- Pour out onto a baking sheet, if using oven, or onto a vegetable grill pan, if using grill. Roast in high heat (425*) for 20 minutes or until vegetables are tender.
