Cucumber Avocado Salad #SundayFunday

Cucumbers, Avocados, Scallions, and Tomatoes are dressed simply with olive oil and lemon juice.  This is a great side dish for whatever you are serving up.  I used it to top Salmon Rice Bowls.

My brother, his wife, and his granddaughter are visiting from California and I had planned on making Salmon Bowls for dinner, garnished with cucumbers and avocado.

As often happens here, the gathering extended to include all my siblings.  Our daughter, Marissa was home and her guy kindly took the family photo.

Instead of individual bowls, I decided to let folks make their own so I turned the garnish into a bright, beautiful salad.

Cucumber Avocado Salad

Cucumber Avocado Salad

Cucumbers, Avocados, Scallions, and Tomatoes are dressed simply with olive oil and lemon juice. This is a great side dish for whatever you are serving up. I used it to top Salmon Rice Bowls.

Ingredients

  • 2-3 cucumbers, diced or sliced depending on size
  • 1 pint cherry tomatoes, halved
  • 2-3 avocados, pitted and diced
  • 1 bunch scallions, white and light green parts, sliced
  • juice of 1 lemon
  • 2 T. olive oil
  • salt and pepper, to taste

Instructions

  1. Place the tomatoes, cucumber, avocado, and scallions in a large bowl.
  2. Season with salt and pepper. Squeeze the juice of 1 lemon over the vegetables and drizzle with the olive oil.
  3. Toss to coat and serve immediately.
