Mixed Fruit Dump Cake

Your husband just came home from the neighbor's house and tells you he invited him to come for dinner in an hour, you quickly pull another steak from the freezer and throw together this amazing dessert using whatever fruits you have in the refrigerator. Voila!!  A great finish to your dinner in less than an hour's time.

In this version, I used up some rhubarb, blackberries, and strawberries that were perfect for baking or smoothies but no longer beautiful enough to serve by themselves....

MIxed Fruit Dump Cake

MIxed Fruit Dump Cake

The great thing about this dessert is it's versatility. You can use any cake mix you have on hand. You can use any fruit; fresh, frozen, or even canned you have on hand. It turns out delicious each and every time.
Prep time: 5 MinCook time: 60 MinTotal time: 1 H & 5 M

Ingredients

  • 8 c. assorted fruit, cut into bite-size pieces
  • 1/3 c. sugar
  • 1 T. cornstarch
  • 1 box cake mix of choice
  • 1 stick + 2 T. butter, melted
  • Whipped Cream or Ice Cream, if desired

Instructions

  1. Toss the fruit with the sugar and cornstarch. Place into a 9x13" baking pan that has been treated with baking spray.
  2. Sprinkle the dry cake mix over the fruit and drizzle with the melted butter.
  3. Bake in a preheated *350 oven for one hour. Serve warm or at room temperature, topping with whipped cream or ice cream if desired.

  5. What ever name this goes by, it's GOOD. I love the fruits that you used and you're right, sometimes those almost past their prime fruits are best for desserts like this.
