Chicken Spiedini and Il Sorriso from Sicily #ItalianFWT

It's Summertime throughout the northern Continents, so we try to beat the heat by breaking out the grills.  If we were visiting or living in Italy that might mean Spiedini.  Spiedini translates to skewers.  Any meat or item can be used.  If it is on a skewer it is Spiedini.

Boneless, skinless chicken breasts are cut into chunks, breaded, placed onto a skewer, and grilled.  I removed mine from the skewers before drizzling them with a delicious, buttery, herb sauce.

The Italian Food Wine and Travel gang are sharing Italian Wines and BBQ this month.  In the USA BBQ can mean grilling or smoked meats served with a sauce depending on the area in which you live.

I wanted to stick with a food you might enjoy cooked on a grill in Italy.  I read several articles and the most talked about grilling recipe was for Spiedini.  I served mine with a bottle of Il Sorriso white wine from Italy.

Il Sorriso is a white blend of grapes native to Sicily containing 70% Lucido and 30% Grillo grapes.  I received my wine as part of my WSJ wine club.  Here is an excerpt from the article they shared about the wine....

This wine comes to you from Cristina Genna and winemaking partner Francesco Asaro. Cristina is a true daughter of Sicily and has winemaking heritage in her blood. Her grandfather (at 90!) still tends his vineyards and her father is also a winemaker. She tells us, “When you are born in Sicily, there is a great likelihood that you are born into a family that, one way or another, has a connection to the vineyard. Sicily is a land of abundant wine, with richness and variety in soils, microclimates, myths and legends. I am part of this fortunate group.”

It is a dry, medium-bodied wine with notes of stone fruit, citrus, and a crisp finish.  It paired nicely with the Chicken Spiedini and it was a very nice aperitif to enjoy while grilling the dinner.

Chicken Spiedini

Chicken Spiedini

Boneless, skinless chicken breasts are cut into chunks, breaded, placed onto a skewer, and grilled. I removed mine from the skewers before drizzling them with a delicious, buttery, herb sauce.

Ingredients

  • 2 lbs. boneless, skinless chicken breast cut into 1-2" cubes
  • salt and pepper to taste
  • 1/2 c. olive oil
  • 1/4 c. dry white wine
  • juice of one lemon, divided
  • 1 c. panko bread crumbs
  • 1 T. Italian Herb Seasoning
  • half stick butter
  • 1/2 c. olive oil
  • 4-5 cloves garlic, minced

Instructions

  1. Place the olive oil, wine, and lemon juice into a plastic bag that seals. Season with salt and pepper and shake to combine. Add the chicken chunks, release the air, and seal the bag. Massage the chicken through the bag so it is completely covered with the oil mixture. Refrigerate for an hour.
  2. Place the panko and Italian herbs in a shallow bowl and mix to combine. Remove the chicken from the oil mixture and dredge in the panko. Place onto skewers and grill over med-high heat for about 5 minutes per side until chicken is cooked through.
  3. Meanwhile, melt the butter in a saucepan over med-low heat (I used my grill side burner). Add the olive oil and garlic and allow to simmer until the chicken is cooked.
  4. You can plate the skewers or remove the meat from the skewers and plate the chicken pieces. Drizzle with the herb butter and serve.

  2. Goodness gracious. It's been years since I has Spiedini (and I think that was for an ItalianFWT theme too. Anyhow, yours looks great and sounds like a delightful pairing!
