Tropical Upside Down Cake #SpringonthePlate #MelissasProduce

When my friend Cam of Culinary Adventures with Camilla invited me to join her in celebrating Spring on the Plate with Melissa's Produce, I jumped at the chance.

I have had the opportunity to work with Melissa's in the past and they are always so generous with so many fresh, colorful, delicious items in the packages they send.  Just look at what I got for this event!!!

Look at all that wonderful spring produce.  From left to right you will see, Buddha's Hand, which is used in this recipe, Fioretto, Golden Berries, Golden Beets, Dragon Fruit, Bananas and Baby Pineapple, both used in this recipe.

I roasted up the Fioretto and served it with dinner the other night.  It was delicious.  Very similar to broccolini, these are the flowers of the cauliflower plant.  I tossed them with olive oil, salt and pepper.  I kept eating them like they were potato chips.

Last night I roasted up the Golden Beets and used them in a salad that I will be sharing with you in the near future.   

But back to the recipe at hand.  Tomorrow is my brother, Dick's, birthday.  We have celebrated on St. Pat's Day for many years.  This year is no exception, even with COVID19 we are getting together for dinner.  We are all well and healthy and it is just him, his wife, Frank and I and Marissa and Melody so I think we will be okay.  

**** Note:  After this was written and scheduled to post, we talked and thought about it and decided we would wait and celebrate after the quarantine is lifted.  

Dick and Jackie went to Cozumel with us just prior to all heck breaking loose here.  We had a great time.  So when I got that wonderful basket from Melissa's containing those baby pineapples, bananas and Buddha's hand, I knew I wanted to make a Tropical Upside Down cake for him to celebrate his birthday.

I am using the Buddha's hand to scent and flavor the cream that I whip to top the cake.  I am writing this post prior to dinner and dessert so I don't have any photos with the cream.  I am simply zesting the Buddha's hand and adding it to the cream with a little powdered sugar. A quick whip with my kitchen aid and it will be ready to garnish this cake.

Tropical Upside Down Cake

Tropical Upside Down Cake

Caramelized baby pineapple and coconut over a tender banana cake. A taste of the tropics to help you welcome spring.

  • 2 T. butter
  • 3/4 c. brown sugar, packed
  • 2 baby pineapples, peeled, quartered, cored and sliced
  • 1 c. sweetened coconut flakes
  • 1 c. flour
  • 1/2 c. sugar
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. cinnamon
  • pinch of salt
  • 1 very ripe banana
  • 2 T. canola oil
  • 1/2 c. pineapple juice
  • 1 egg


How to cook Tropical Upside Down Cake

  1. Melt the butter in a cast iron skillet.  Sprinkle with the brown sugar.  Arrange the pineapple slices over the brown sugar.  Sprinkle the coconut over the top.
  2. Combine the flour, sugar, baking powder, baking soda, cinnamon and salt in a large bowl. 
  3. Whisk together the juice, banana, oil and egg.  Pour into the dry ingredients and mix until combined.  Pour over the coconut and pineapple mixture, spread to cover. 
  4. Bake in a preheated 375* oven for half an hour, until a skewer inserted comes out clean.
  5. Run a knife around the edge of the cake and pan, turn onto a serving platter.  
  6. Top with a dollop of whipped cream, if desired.
