Be sure to follow our Pinterest board for more summer BBQ ideas. Thank you to Christie from A Kitchen Hoor's Adventures and Ellen from Family Around the Table for hosting the event.

These skewers take more time to prep and assemble than they do to cook and they don't take very long to prep and assemble.

A marinade of lime juice, olive oil and adobo seasoning does double duty being brushed onto the skewers before grilling and the rest being tossed with pineapple, mango, jalapeno and mint as a salsa to serve with the shrimp.

I served it up with a Royal Blend Rice Mixture that was ready in 20 minutes.  Dinner on the table in less than half an hour.  Life is good in the summertime.

I hope you have enjoyed this event as much as I.   I have so many recipes that I can't wait to try....now I just need the Michigan weather to cooperate!!!!
