- 2 boneless, skinless chicken breast halves
- 1/2 c. flour
- salt and pepper, to taste
- 1 T. olive oil
- 1 T. butter
- 1/2 c. dry white wine
- juice of 1 lemon
- 2 T. capers, drained
- Using a meat mallet, pound the breasts into an even thickness, about 1/4" thick. Cut in half and set aside.
- Place the flour, salt and pepper into a sealable bag or shallow dish. Dredge the chicken in the seasoned flour.
- Melt the butter and olive oil in a large skillet over med high heat. When hot but before butter starts to brown, add the chicken and cook about 3 minutes per side until golden brown. Remove chicken to a plate.
- Deglaze the pan with the wine, cooking and stirring until reduced and thickened. Return the chicken and any accumulated juices to the pan and squeeze the lemon juice over all. Add the capers, cover and simmer until chicken is cooked through reaching an internal temperature of 165* is reached, about 5 minutes longer.
- Remove to a platter and drizzle with the sauce from the pan.
Yield: 4 servings
