Cottage Cheese Chocolate Chip Muffins
Sneak some protein into those morning muffins you hand to the family as they run out the door. These muffins are light, fluffy, and delicious using cottage cheese and applesauce for the liquid ingredients.
Ingredients
- 3/4 c. protein rich, small curd, cottage cheese
- 1/2 c. pure maple syrup
- 1 t. vanilla
- 1/4 c. applesauce
- 2 T. vegetable oil
- 2 eggs
- 1 1/2 c. flour
- 1 1/2 t. baking powder
- pinch of salt
- 1/2 c. semi sweet chocolate chips
Instructions
- Whisk together the flour, baking powder, and salt in a large bowl. Make a well in the center.
- Whisk together the cottage cheese, syrup, vanilla, apple sauce, oil and eggs. Pour this into the well of dry ingredients.
- Mix just until combined. Stir in chocolate chips.
- Divide between 9 muffin cups that have been treated with baking spray.
- Bake in a preheated 350* oven for 20-25 minutes, until a skewer inserted removes cleanly.
