Lavender Bee's Knees Martini #BrunchWeek

The perfect spring cocktail to start off a brunch celebrating all the important women in your life this Mother's Day.  Bee's Knees is an iconic cocktail that is lightened up and made special with the addition of a lavender-infused sparkling wine.

This gorgeous color is perfect for Easter, Mother's Day, or a Kentucky Derby gathering.  Anywhere you are celebrating with a brunch, whether it's just you or a whole gang.

It is time for Brunch Week, an annual event that we are celebrating today, Wednesday, and Friday.  We are sharing some great brunch ideas as we head into the Spring celebrations. This event is hosted by Christie of A Kitchen Hoor's Adventures.  Let's see what was brought to Brunch today....

I was first introduced to the Bee's Knees cocktail at a wedding.  The Bride and Groom each had signature cocktails being served, and the Bee's Knees was the bride's choice.

Then my husband and I went to Cooper's Hawk Restaurant for brunch one Sunday, and they were serving a Bee's Knees cocktail featuring their spring release of a sparkling wine cocktail called Lavender Bee's Knees.  There were several cocktails made with this wine, but my favorite was the one that most closely resembled the traditional Bee's Knees.

I bought a couple of bottles of this wine; the first was used to make these cocktails for our Easter gathering.  I am saving the second for our first Spring gathering on the deck.  Now I just need for the weather to cooperate.

Lavender Bee's Knees Cocktail

The perfect spring cocktail to start off a brunch celebrating all the important women in your life this Mother's Day. Bee's Knees is an iconic cocktail that is lightened up and made special with the addition of a lavender-infused sparkling wine.

Ingredients

  • 1 shot of Gin
  • 1 shot of honey simple syrup
  • 1/2 shot fresh lemon juice
  • 1 shot Lavender Bee's Knees Sparkling Wine

Instructions

  1. To make honey simple syrup, shake together equal parts honey and warm water until the honey dissolves. Store any unused portion in the refrigerator.
  2. Fill a cocktail shaker with ice. Add the gin, honey simple syrup, and lemon juice, and shake until icy cold and well blended.
  3. Pour into a chilled martini glass and float the Bee's Knees wine on top.
