Caprese Asparagus #BrunchWeek

This delicious recipe makes a perfect side dish for a Brunch Buffet.  Roasted Asparagus smothered in Mozzarella Cheese before being topped with Roasted Cherry Tomatoes.  Caprese has never tasted so good!

Asparagus Caprese

This is an easy dish.  Assemble it ahead of time and then pop it into the oven for 20 minutes before serving.

This delicious recipe makes a perfect side dish for a Brunch Buffet. Roasted Asparagus smothered in Mozzarella Cheese before being topped with Roasted Cherry Tomatoes. Caprese has never tasted so good!

Ingredients

  • 1 lb. asparagus, hard, woody stems snapped off
  • Olive oil
  • Italian Seasoning, to taste
  • Salt and Pepper, to taste
  • 2 c. shredded Mozzarella cheese
  • 12 oz. cherry tomatoes

Instructions

  1. Toss the asparagus with olive oil, Italian seasoning, salt and pepper. Spread over half a sheet pan. Sprinkle with the shredded cheese.
  2. Place the tomatoes on the other half of the sheet pan. Drizzle with olive oil, season with salt and pepper.
  3. Roast in a 425* oven for about 20 minutes, until asparagus is tender, cheese is melted and tomatoes are softened.
  4. Arrange the asparagus on a serving platter and top with the tomatoes.
