Cottage Cheese Muffins and a Book Review #SundayFunday

Sneak some protein into those morning muffins you hand to the family as they run out the door.  These muffins are light, fluffy, and delicious using cottage cheese and applesauce for the liquid ingredients.

I used high-protein, small curd, low-fat cottage cheese.  You can use whatever cottage cheese you have on hand.  If using large curd give it a whirr in the food processor or blender after measuring.  You can do the same with the small curd if you don't want folks to know the secret ingredient.

The Borrowed Life of Frederick Fife

I'm also sharing a book review of The Borrowed Life of Frederick Fife.  This lovely, novel by Anna Johnston follows Frederick Fife as he finds himself in the presence of his doppelganger who has apparantly died of a heart attack while sitting in his wheelchair.  Fred looks over and sees a group of elderly residents on an outing from their assisted living center and decides to wheel him over to the group when he stumbles, falls, hits his head and watches in horror as his look-alike rolls down a cliff into a stream.

The next thing Fred knows, he is being bundled up and transported back to the assisted living center, where he is treated for his injuries and given a warm meal and bed.  Fred tries desperately to convince the staff that he is not who they think he is but it seems the doppelganger, Bernard, had the beginnings of dementia, so Fred's arguments are for nought.

Fred, who was on the verge of being homeless, after spending their life savings on cancer treatments for his late wife, soon decides he is much better off at the assisted living center than he was on the outside.

While these specific muffins were not mentioned, there were muffins and tons of other foods in the novel and these muffins, with the extra-protein would be a great addition to the foods offered at the assisted living center.

Cottage Cheese Chocolate Chip Muffins

Sneak some protein into those morning muffins you hand to the family as they run out the door. These muffins are light, fluffy, and delicious using cottage cheese and applesauce for the liquid ingredients.

Ingredients

  • 3/4 c. protein rich, small curd, cottage cheese
  • 1/2 c. pure maple syrup
  • 1 t. vanilla
  • 1/4 c. applesauce
  • 2 T. vegetable oil
  • 2 eggs
  • 1 1/2 c. flour
  • 1 1/2 t. baking powder
  • pinch of salt
  • 1/2 c. semi sweet chocolate chips

Instructions

  1. Whisk together the flour, baking powder, and salt in a large bowl. Make a well in the center.
  2. Whisk together the cottage cheese, syrup, vanilla, apple sauce, oil and eggs. Pour this into the well of dry ingredients.
  3. Mix just until combined. Stir in chocolate chips.
  4. Divide between 9 muffin cups that have been treated with baking spray.
  5. Bake in a preheated 350* oven for 20-25 minutes, until a skewer inserted removes cleanly.
