Orange Turkey Meatballs and the Weekly Menu

Tender turkey meatballs seasoned with Asian flavors, covered with a delicious orange sauce, served over rice for an easy, delicious dinner.

Orange Turkey Meatballs

I adapted this recipe from one provided to Costco by Sunkist Growers.  I served it over a package of frozen rice pilaf that steams in the microwave, providing my family with a wonderful meal in only 45 minutes.

Tomorrow, I have a wedding shower to attend, and then we are meeting up with friends for cocktails in the evening.  Sunday is the anniversary of losing Kirsten.  Not a day goes by that I don't miss her.  We will be singing at a Mass said for her.  Sunday evening, we are going to Nicole's for dinner.  Anthony will be out of town next weekend when we celebrate Frank's birthday, so Nicole is hosting so that they can celebrate together.

Wednesday evening, we are attending a Somm Slam at Andiamo Pasta and Chops.  It is always a good time.

Most of the week will be spent cleaning the decks and outdoor furniture, and opening the pool to get ready for Frank's 75th birthday celebration on May 2nd.  We will be having a Mexican Fiesta as it is so close to Cinco de Mayo.  Here is what we're having for dinner this week.

Orange Turkey Meatballs

Orange Turkey Meatballs

Tender turkey meatballs seasoned with Asian flavors, covered with a delicious orange sauce, served over rice for an easy, delicious dinner.

Ingredients

  • 1 lb. ground turkey
  • 2/3 c. panko bread crumbs
  • 1 egg
  • 2 T. soy sauce
  • 2 t. garlic paste
  • 1 t. ginger paste
  • 1 T. peanut oil
  • 1/2 c. freshly squeezed orange juice
  • 2 T. honey
  • 1 T. rice vinegar
  • 1 T. cornstarch
  • 2 T. water
  • 2 c. cooked rice of choice for serving

Instructions

  1. Combine the turkey, panko, egg, soy sauce, garlic, and ginger. Divide into 12 equal portions and shape into meatballs.
  2. Heat the oil in a large skillet over medium heat. Sear the meatballs on all sides for about 10 minutes, until cooked through to an internal temperature of 165*. Remove to a plate and set aside.
  3. Add the orange juice, honey, and vinegar to the skillet and bring to a boil. Whisk together the cornstarch and water. Whisk into the hot liquid, and cook until thickened.
  4. Return the meatballs to the skillet and cook for a couple of minutes to reheat. Serve over cooked rice.
