Popcorn Granola Bars
Just 5 ingredients and 5 minutes of hands-on time will yield a week's worth of healthy granola bars.

Ingredients
- 1/2 c. honey
- 2/3 c. peanut butter
- 1 c. granola (I used a blueberry cinnamon blend)
- 1 c. roasted mixed nuts
- 3 cups popped popcorn
Instructions
- Place the honey and peanut butter in a small saucepan over medium-high heat. Cook and stir until melted, combined, and creamy.
- Place the popcorn, granola, and nuts into a large bowl. Pour the honey/peanut butter mixture over and stir to combine.
- Press this mixture into a 9" square baking pan that has been lined with aluminum foil.
- Cover and refrigerate for several hours, then cut into 16 bars. Individually wrap the bars and store in the refrigerator for up to 2 weeks.

Adding popcorn to granola bars is genius, Wendy! Extra fiber, extra crunch and it makes the bars a little more reasonable calorie-wise. Love this!
