These bars come together in minutes but need to be placed in the freezer for about an hour before cutting and wrapping in parchment for storing. They are very sticky so parchment is a must. I stored them in the refrigerator thinking that I would be snacking on them during the week but the girls found them and they were gone in 2 days. Luckily they are easy to make and I still have enough ingredients to make another batch.

Fruit and Nut Bars
These fruit and nut bars are chock full of nutrients, protein, and antioxidants. They taste like you are eating a piece of candy. Nutrition never tasted so good.

Ingredients
- 12 pitted dates
- 1/4 c. peanut butter
- 1/4 c. honey
- 1 t. vanilla
- 1/2 c. oats ( I used old-fashioned)
- 2 1/2 c. trail mix
Instructions
- Process the dates in a food processor until they form a ball. Transfer to a large bowl.
- Combine the peanut butter, honey, and vanilla in a small pan over medium heat. Cook and stir until melted and combined. Pour into the bowl with the dates.
- Stir in the oats and trail mix until completely coated and combined.
- Press into an 8" baking pan that has been lined with parchment on the bottoms and over the sides. Cover and place in the freezer for at least one hour.
- Remove from freezer to a cutting board and cut into 15 pieces. Wrap each piece individually with parchment paper for easy snacking.

DeleteI am all over these, Wendy. I need a treat that makes me think I am eating a candy bar. I might even wrap them up in paper just for the fun of opening it.
