Happy 2025!!!  I invited the others to join me in starting off the year with some Nutritious Nibbles to help us slowly wean off all of the cookies, candies and desserts of the Christmas Season.   I hope you join us......
Trail Mix

These fruit and nut bars are made with dried dates, peanut butter, honey, oats and trail mix.  If you don't have trail mix you can add 2 1/2 cups of nuts of choice, dried fruit of choice, and seeds of choice.  Ideally you would want to use natural peanut butter.  I used JIF so there is some added sugar in the bars I made.

Fruit and Nut Bars

These bars come together in minutes but need to be placed in the freezer for about an hour before cutting and wrapping in parchment for storing.  They are very sticky so parchment is a must.  I stored them in the refrigerator thinking that I would be snacking on them during the week but the girls found them and they were gone in 2 days.  Luckily they are easy to make and I still have enough ingredients to make another batch.

Prep time: 10 MinInactive time: 1 HourTotal time: 1 H & 10 M

Ingredients

  • 12 pitted dates
  • 1/4 c. peanut butter
  • 1/4 c. honey
  • 1 t. vanilla
  • 1/2 c. oats ( I used old-fashioned)
  • 2 1/2 c. trail mix

Instructions

  1. Process the dates in a food processor until they form a ball. Transfer to a large bowl.
  2. Combine the peanut butter, honey, and vanilla in a small pan over medium heat. Cook and stir until melted and combined. Pour into the bowl with the dates.
  3. Stir in the oats and trail mix until completely coated and combined.
  4. Press into an 8" baking pan that has been lined with parchment on the bottoms and over the sides. Cover and place in the freezer for at least one hour.
  5. Remove from freezer to a cutting board and cut into 15 pieces. Wrap each piece individually with parchment paper for easy snacking.

  4. I am all over these, Wendy. I need a treat that makes me think I am eating a candy bar. I might even wrap them up in paper just for the fun of opening it.

    1. And if they're wrapped you can take them with you in case you need a snack during the day.
