Just 5 ingredients and 5 minutes of hands-on time will yield a week's worth of healthy granola bars. Grab one as you walk out of the house to run errands, to recover post-workout, to take on a hike, or to tuck into a lunchbox for a healthy sweet ending.

Cam of Culinary Cam is hosting this week and invited us to share popcorn recipes as January is National Popcorn Month.  

Popcorn is a staple in this household.  Frank uses a Whirlypop Pan, and it turns out perfectly every time.  Do you know that a cup of popcorn cooked in oil has only 35 calories?  If you add butter to your popcorn, the total calories per cup increase to 40.  

Popcorn is a whole grain and a great source of fiber and antioxidants. You can enjoy a huge bowl of popcorn guilt-free.  It is the perfect snack.

Popcorn Granola Bars

You can take this healthy ingredient and add it to other healthy snacks you have at home to make your own granola bars with only the ingredients you allow.

It takes only minutes to assemble, but it needs to be refrigerated for a few hours before cutting it into bars.

While these Popcorn Granola Bars are not low in calories, they are high in protein, fiber, and whole grains, and will provide the energy you need to power through your day.

Popcorn Granola Bars

Popcorn Granola Bars

Just 5 ingredients and 5 minutes of hands-on time will yield a week's worth of healthy granola bars.

Ingredients

  • 1/2 c. honey
  • 2/3 c. peanut butter
  • 1 c. granola (I used a blueberry cinnamon blend)
  • 1 c. roasted mixed nuts
  • 3 cups popped popcorn

Instructions

  1. Place the honey and peanut butter in a small saucepan over medium-high heat. Cook and stir until melted, combined, and creamy.
  2. Place the popcorn, granola, and nuts into a large bowl. Pour the honey/peanut butter mixture over and stir to combine.
  3. Press this mixture into a 9" square baking pan that has been lined with aluminum foil.
  4. Cover and refrigerate for several hours, then cut into 16 bars. Individually wrap the bars and store in the refrigerator for up to 2 weeks.

  1. Adding popcorn to granola bars is genius, Wendy! Extra fiber, extra crunch and it makes the bars a little more reasonable calorie-wise. Love this!
