It is finally, truly winter here in Michigan. It is freezing cold and we have snow. We were very spoiled after the last few winters that were so mild. Folks around here are either complaining or celebrating depending on how much you like winter sports, whether you are working and having to commute on icy roads, or are retired and can enjoy the beauty of undisturbed winter scenes while cuddled up on the couch surrounded by the warmth of the fireplace.
This makes Sue's choice for Comfort Food perfect timing for my neck of the woods. The cold weather always makes me hunger for roasts, stews, casseroles, and pasta. All comfort foods in my book. I am sharing the view from my seat near the fire where I am writing this post. You can probably guess that I am more celebratory than complaining. Of course, that may be because as you are reading this post today, Frank and I are on a plane heading to Sunny California to visit my brother and his family before boarding another plane to the tropical beauty of Maui.

You can serve this pork loin roast without the cherry sauce but it is an easy addition that takes the meal a notch higher.

Roast Pork Loin with Cherry Sauce
Boneless Pork Loin Roast cooked to a perfect medium and topped with a savory cherry sauce. A perfect comfort meal for a cold Sunday in January.

Ingredients
- 3 lb. boneless pork loin roast
- 2 T. olive oil
- 2 T. Herbs de Provence
- salt and pepper, to taste
- 2 c. bottled cherry juice
- 1/2 dried cherries
Instructions
- Mix together the olive oil, herbs, salt, and pepper. Rub all over the roast and place onto a roasting rack.
- Roast in a preheated 350* oven for about an hour, until an internal temperature of 145* is reached. Remove from the oven, cover with foil, and let rest while you make the cherry sauce.
- Place the juice and dried cherries in a small sauce pan over high heat. Bring to a boil. Reduce the heat to a simmer and cook until the liquid is reduced by half and the cherries are plumped, about 10 minutes.
- Slice the roast and place onto a platter, pouring the cherry sauce over the top.
