I was inspired to make this Grilled Lemon Chicken after reading The Old Duck's Club......

I enjoyed both of these fun novels by Maddie Please. The protagonists in both books are women over 50 who discover that life doesn't end during the second half of your existence but, in fact, sometimes it is only beginning!!
In the Old Duck's Club, Sophia who is getting ready to celebrate her 60th birthday when she finds out that the married man with whom she is having an affair is not only cheating on his wife with her but cheating on her with other women.
She decides to escape her dead end life for a while and heads to a rental home on the Greek Island of Rhodes. She has so lost herself that she intends to hole up and actually finish working on editing a book for her lover with whom she is hoping to make a clean break.....as soon as she is done doing his bidding.
The very first night she arrives, her sleep is disrupted by 3 women in the house next door who are having a grand, if loud, holiday beginning with drinks in the hot tub. Sophia is very put out by this but in her typical fashion all of her recriminations are only in her head and she quietly seethes until she is able to fall asleep again.
The following day she meets these women, Juliette, Kim and Anita, who have been friends forever and have decided that they are NOT going to grow old gracefully but to enjoy the second half of their lives more than they did the first halves. They call themselves the Old Ducks' Club and immediately give Sophia membership to their society.
What follows is the fun adventures of these women finding their hearts, their voices and their worth. There is, of course, romance too. As in Please's other novel there are moments when I found myself laughing out loud. If you are looking for a quick, fun read and you are also in the second half of your life, I think you will enjoy this novel as much as I.
Sophia loves to cook and invites her new friends over for dinner, making a lemon roasted chicken. I don't have a kitchen right now as we are in the middle of a remodel, but I do have a grill so I made lemon grilled chicken for our dinner one evening.
When inspired to make Greek Food I always turn to It's All Greek to Me by Debbie Matenopoulos. I have never made anything from this cookbook that has not turned out lovely. You can read my review and another chicken recipe here. I have also made Makaronia me Yiaourti, Lahano me Kreas, Baklava, Soutzoukakia , Kreatopita , Galaktoboureko , Dolmathes, Horiatki Salata , Fasolada, Spinach Pie as well as the Pilafi mentioned above. As you can see, this is one of my favorite cookbooks.
I was just as pleased with this Lemon Grilled Chicken as I have been with each of the other recipes. The Old Ducks' would have loved it.

Lemonati Kota sta Karvouna
Chicken breasts marinated in lemon and oregano before being grilled to perfection. Serve it up as a salad as I did or with a side of Pilafi for a heartier dinner.

Ingredients
- juice from 1 lemon
- 2 T. olive oil
- 1 t. dried oregano
- 2-3 scallions, white portions, thinly sliced
- salt and pepper, to taste
- 2 boneless, skinless chicken breasts
Instructions
- Place the lemon juice, olive oil, oregano, scallions, salt and pepper into a sealable plastic bag. Shake to combine.
- Add the chicken breasts, release the air, seal the bag and massage the breasts through the bag so they are covered in marinade.
- Refrigerate for at least one hour up to overnight.
- Heat a grill to med high and cook the breasts over direct heat for 5-8 minutes per side, depending on the thickness of the breasts, until an instant read thermometer shows 165*
