I want to thank Ellen of Family Around the Table and Christie of A Kitchen Hoor's Adventures for hosting this timely event.  I have been hitting farm stands and markets every chance I get, especially our neighborhood Potato Joes who has the best sweet corn you can find.

I used some of that sweet corn, along with some green bell peppers from my neighbor's garden and fresh parsley from my garden to create this delicious and beautiful dish.

Cajun Shrimp

Cajun Shrimp

Tender, juicy shrimp tossed with bell peppers and corn, flavored with Cajun seasonings and lemon, creates a delicious dish that you will be proud to serve.

Ingredients

  • 2 T. olive oil, divided
  • 1/2 vidalia onion, diced
  • 3 cloves garlic, minced
  • 2 green bell peppers, seeded, stemmed and diced
  • kernals from 2 ears of corn
  • 2 lbs raw shrimp, peeled and deveined
  • 2 t. Cajun seasoning
  • salt and pepper, to taste
  • juice of half a lemon
  • Parsley for garnish

Instructions

  1. Heat 1 Tablespoon of the oil in a large skillet or wok over medium heat. Add the onion and peppers. Season with salt and pepper. Cook until tender, about 5 minutes, stirring occasionally.
  2. Add the corn and garlic. Season with salt and pepper. Cook and stir for another minute or two. Transfer all vegetables to a bowl.
  3. Heat remaining 1 Tablespoon of oil in the same skillet. Add shrimp and season with the Cajun seasonings, salt and pepper. Cook until shrimp are pink, tossing to cook both sides.
  4. Return the vegetables to the skillet and sprinkle with the lemon juice. Toss to combine and place onto a serving platter, garnishing with chopped parsley.
