I baked up this cake for my friend, Karen, when I invited her over for her birthday dinner. When she arrived it was sitting in the pan cooling, waiting to be turned onto the rack to finish cooling. She watched as I turned the cake onto the rack, being pleased as punch that it released cleanly and was beautiful.
Then, right before our very eyes, the insides started leaking out through the hole in the bundt. I quickly put the pan back over the bundt, flipped it over and stuck it back in the oven, with my fingers crossed, praying it wasn't completely ruined.
Success!! I am happy to report that it turned out just fine with another half an hour in the oven. We enjoyed it and Karen took a piece home with her. A couple of days later, we had a casual poolside dinner with our friends, The Luths, and Frank's sister, Roz, and niece, Danielle.
After dinner I brought out the remaining half of a cake and, as often happens with spice cakes, it was even tastier than the first night. Roz asked me to send the recipe to her. On Wednesday morning, when I awoke, she had sent me an email saying "Wendy-Please send over the recipe. That cake was great....."

Applesauce Spice Cake
With just one bowl and 15 minutes time you can whip up this scrumptious Applesauce Cake flavored with warm spices and studded with chocolate chips.

Ingredients
- 2 1/2 c. flour
- 1 1/2 c. sugar
- 2 t. baking soda
- 2 t. cinnamon
- 1 t. cardamom
- 1 t. salt
- 1/2 t. cloves
- 1/2 t. freshly ground pepper
- 2 c. unsweetened applesauce
- 2 eggs
- 1/2 c. canola oil
- 1 stick butter, melted
- 2 c. semisweet chocolate chips
- Powdered sugar for dusting
Instructions
- Whisk together the flour, sugar, baking soda, cinnamon, caramom, salt, cloves and pepper.
- Add the applesauce, eggs, oil and melted butter, whisking until combined.
- Stir in the chocolate chips.
- Pour into a 12 cup bundt pan that has been liberally treated with baking spray and bake for 75-90 minutes, or until a skewer inserted removes with a few crumbs attached.
- Cool in pan on rack for 10 minutes before inverting onto the rack to cool completely.
- Sprinkle with powdered sugar before serving.
