When I saw this recipe from Food Network it sounded delicious so I printed it out and put it in my to make file. When Sue announced the theme for this week's Sunday Funday Blogging group I remembered it and pulled it out.
I still have a garden full of mint so Mojitos are a popular drink here on the Farm. I was anxious to try this watermelon version.
This cocktail is perfect. It is light and refreshing. More tart than sweet and very flavorful. It is going to be a regular offering here when we are entertaining poolside.
Yield: 2 cocktails
Watermelon Mojitos
This refreshing, delicious drink is the perfect summertime cocktail.

Ingredients
- 1 c. watermelon chunks
- juice of 2 limes
- 4 t. sugar
- 10-12 mint leaves + more for garnish
- 4 oz. white rum
- Ginger Ale for topping (I only use Vernors)
Instructions
- Muddle the watermelon, lime juice, sugar, and mint leaves in a cocktail shaker. Add the rum and shake to combine and dissolve the sugar.
- Fill 2 tall glasses with ice. Using a strainer, divide the watermelon mixture between the glasses.
- Top with ginger ale and garnish with additional mint leaves, if desired.
