As I do each summer, I am constantly looking for ways to use up the mint that seems to take over my garden.  So I went off in a google search for recipes containing mint and yogurt and came upon the idea for this recipe from Eating Well.  I had just bought some strawberries so I adapted the recipe to fit my ingredients and taste and served these up for a light dessert after a day of fun in the sun.

As I was enjoying the leftovers for breakfast the next day, it occurred to me that this would be a great flavor combo for a smoothie.  Luckily I have all the ingredients I need to see if I'm right.

Strawberries with Minted Yogurt

Strawberries with Minted Yogurt

Enjoy the best of the Summer Bounty with this easy and delicious recipe. Perfect for a light dessert, as breakfast in the morning or as a refreshing snack anytime.

Ingredients

  • 1/2 c. Plain Greek Yogurt
  • 1/2 c. buttermilk
  • 1 T. sugar
  • 1 T. honey
  • 2 T. chopped mint
  • 1 drop vanilla paste
  • 1 lb. strawberries

Instructions

  1. Rinse and dry the strawberries, remove stems, cut into quarters and place in a serving bowl.
  2. Whisk together the yogurt, buttermilk, sugar, honey and vanilla. Pour over the strawberries, garnish with mint leaves, if desired and serve.

  2. Wendy please pass on some of that mint here ;) what a wonderful recipe, succulent strawberries, fresh mint flavour and creaminess from the yogurt. Perfect breakfast or dessert option.

    1. I could give you one stem and next year you would have to thin it out....it goes crazy quickly.

  3. I eat a LOT of fruit in hot weather and it is coming back in a few days. This will make a great breakfast instead of turning on the stove.

    1. Yes, but for breakfast I would omit the sugar and just add a drizzle of honey. It was sweet with the 2 T. of sweetner, more suited for dessert.
