Mexican Pork Skewers
Pork Tenderloin flavored with Mexican spices and nestled between onions and sweet peppers before being grilled to perfection.
Prep time: 15 MinCook time: 15 MinInactive time: 2 HourTotal time: 2 H & 30 M
Ingredients
- 2 pork tenderloins
- Juice and zest of 1 lime
- one onion, diced
- Juice of one large orange
- handful of cilantro, chopped
- 1 t. oregano
- 1 t. cumin
- 1 t. brown sugar
- 2 cloves garlic, minced
- pinch of salt
- 1/4 c. olive oil
- 2 yellow bell pepper, seeded and cut into chunks
- 1 red onion, cut into chunks
- Tortillas
- Guacamole, salsa, cheese, sour cream for serving, if desired.
Instructions
- Trim the pork tenderloins, removing any silverskin. Cut each tenderloin in half lengthwise and then into 1" chunks. Set aside.
- Place the lime juice and zest, onion, orange juice, cilantro, oregano, cumin, sugar, garlic, salt and oil into a sealable plastic bag. Shake to combine. Add the pork, remove as much air as possible from the bag and seal. Massage the bag, making sure the pork is all covered with marinade. Place in the refrigerator for an hour or two until ready to assemble.
- Remove pork from bag, discard marinade, and alternate the pork, yellow peppers, and red onion chunks onto 10 metal skewers.
- Preheat a gas grill or indoor grill pan to medium high heat. When hot, cook the skewers for about 7 minutes per side, until an internal temperature of 145* is reached and grill marks are visible.
- Remove to a platter and serve on or off the skewers with tortillas and your favorite Mexican condiments.
