Mexican Pork Skewers #FootballFood

Pulling out the grill for a tailgate party?  Then cook up these delicious pork skewers flavored with Mexican spices and nestled between onions and sweet peppers before being grilled to perfection.  Once cooked, remove the skewers, wrap them in a tortilla along with your favorite toppings and enjoy this handheld treat while cheering on your favorite team.

    I am not a huge football fan but I am a huge party fan and football is as good an excuse as any for me to invite folks over for good food and beverages.  I am very anxious to try some of the great recipes being shared today and if it calls for lighting up the grill, you can be sure that these skewers will be going on there too!!

    Of course, if you live in Michigan as I do then you quickly learn that a grill pan on the stove gives you the same great surface and results as a gas grill so don't let the weather keep you from trying these delicious kabobs.

    Mexican Pork Skewers

    Mexican Pork Skewers

    Pork Tenderloin flavored with Mexican spices and nestled between onions and sweet peppers before being grilled to perfection.

    Ingredients

    • 2 pork tenderloins
    • Juice and zest of 1 lime
    • one onion, diced
    • Juice of one large orange
    • handful of cilantro, chopped
    • 1 t. oregano
    • 1 t. cumin
    • 1 t. brown sugar
    • 2 cloves garlic, minced
    • pinch of salt
    • 1/4 c. olive oil
    • 2 yellow bell pepper, seeded and cut into chunks
    • 1 red onion, cut into chunks
    • Tortillas
    • Guacamole, salsa, cheese, sour cream for serving, if desired.

    Instructions

    1. Trim the pork tenderloins, removing any silverskin. Cut each tenderloin in half lengthwise and then into 1" chunks. Set aside.
    2. Place the lime juice and zest, onion, orange juice, cilantro, oregano, cumin, sugar, garlic, salt and oil into a sealable plastic bag. Shake to combine. Add the pork, remove as much air as possible from the bag and seal. Massage the bag, making sure the pork is all covered with marinade. Place in the refrigerator for an hour or two until ready to assemble.
    3. Remove pork from bag, discard marinade, and alternate the pork, yellow peppers, and red onion chunks onto 10 metal skewers.
    4. Preheat a gas grill or indoor grill pan to medium high heat. When hot, cook the skewers for about 7 minutes per side, until an internal temperature of 145* is reached and grill marks are visible.
    5. Remove to a platter and serve on or off the skewers with tortillas and your favorite Mexican condiments.
