Sicilian Salad #SundayFunday

 This delicious and beautiful salad is perfect to grace your holiday table. Seasonal citrus combined with the flavors of Italy on a platter is a great way to eat the rainbow.

With the pandemic still raging throughout the USA we are remaining vigilant and not having large gatherings this holiday season.  Instead we have been having small dinner parties where we are able to remain socially distanced with our friends and family who have been following the CDC guidelines.

Sicilian Salad pin

This salad is perfect for serving with the Feast of the Seven Fishes or perhaps an ooey, gooey tray of Lasagna.  It's a nice change from your traditional tossed salad and is beautiful to behold.

Sicilian Salad

Sicilian Salad

This delicious and beautiful salad is perfect to grace your holiday table. Seasonal citrus combined with the flavors of Italy on a platter is a great way to eat the rainbow.

Ingredients

  • 1 grapefruit, peeled, pith removed, cut into bite size pieces
  • 2 blood oranges, peeled, pith removed, cut into bite size pieces
  • 1 small red onion, cut into slices
  • Pickled Pepperoncini chiles, drained
  • 1 small fennel bulb, cored and sliced
  • Black olives, pitted
  • 5-6 mint leaves, minced
  • 5-6 basil leaves, cut in chiffonade
  • salt and pepper to taste
  • juice of 1/2 a lemon
  • Extra virgin olive oil for drizzling

Instructions

  1. Arrange the grapefruit, oranges, onion, pepperoncini, fennel and olives on a platter.  Season with salt and pepper.  Drizzle with lemon juice and olive oil.  Sprinkle with the mint and basil.
