Winter Crunch Grape and Cranberry Sauce #FamilyBakingChallenge

This delicious sauce is the perfect accompaniment for your roasted Turkey, Chicken or Pork.  I served it up on Thanksgiving where it was a huge hit.  It keeps well in the refrigerator for two weeks and was perfect for dressing up a simple roast pork tenderloin.

This week these lovely Winter Crunch Grapes are being showcased.  The recipe provided by Real Food, Mostly Plants was for a delicious cake.  I was tempted by this but I have an over abundance of sweets in the house right now so I decided to use these wonderful, crunchy, sweet grapes in my cranberry sauce this year.


I served it up with our Thanksgiving Dinner, it was the perfect accompaniment to this Smoked Turkey.
The next day it was used for Turkey and Cranberry Sandwiches.  A couple of days later I made a batch of Turkey, Cheese and Cranberry Pull Apart Bread that I will be sharing with you next week.




I still had enough left to dress up this roasted pork tenderloin that I took over to Aunt Irene's for our weekly visit where we bring her dinner and play pinochle.  


I didn't use all of the grapes for this sauce.  I had used some of them on a cheese and fruit plate that I put together for the family to snack on while awaiting our Thanksgiving Dinnner.  I had never had these Winter Crunch Grapes before this wonderful gift arrived from Melissa's.  I will be keeping an eye out for them. They are amazing.

Grape and Cranberry Sauce

Grape and Cranberry Sauce

This delicious sauce is the perfect accompaniment for your roasted Turkey, Chicken or Pork.

Ingredients

  • 1 c. 100% pure grape juice
  • 1 c. brown sugar, packed
  • zest of 1/2 lemon
  • 8 oz. cranberries
  • 16 oz. seedless red grapes ( I used Winter Crunch)
  • 1 cinnamon stick
  • 1 t. fresh thyme leaves

Instructions

  1. Place grape juice, brown sugar and lemon zest in a large sauce pan over med high heat.  Cook and stir until sugar is dissolved, about 5 minutes. 
  2. Add the cranberries, grapes and cinnamon stick. Bring back to a boil, reduce heat to medium and simmer until it starts to thicken.  When the cranberries start to pop use a potato masher or wooden spoon to crush the fruit, about 25 minutes.  Remove the cinnamon stick. Stir in the thyme and  place into a serving bowl to cool.
  3. Will keep, covered in the refrigerator, for 2 weeks.
