Seasoned Rice #HolidaySideDishes

Making your own seasoned rice is not much more difficult than opening a packet from that boxed rice mix and you have the added satisfaction of knowing exactly what your family and friends are eating.

We have been sharing Holiday Side Dishes every other day all week long.  This idea came from our friend, Heather of Hezzi D's Books and Cooks.  The idea was to make sure our readers had tons of recipes from which to choose for their Holiday Feasts.

I actually made this recipe last year for a Family Holiday but hadn't gotten around to sharing it with you.  I have a ton of archived recipes to share and I am always happy when I have an event that allows me to do so.

This recipe, as many of mine, was found in Cuisine at Home.  The recipe called for a box of seasoned wild rice blend.  I didn't have any on hand so I decided to make my own.  I always have a container of Royal Blend Rice in my cupboard.  We eat rice a lot and I like the added texture and taste of using different rices.  All I was missing was the seasoning packet.

Seasoned Rice with Walnuts

Making your own seasoned rice is not much more difficult than opening a packet from that boxed rice mix and you have the added satisfaction of knowing exactly what your family and friends are eating.

ingredients:

1/2 c. chopped walnuts
1/2 c. apple cider
1 1/2 c. water
1 T. butter
1 c. Royal Rice Blend
1 chicken bouillon cube
1 T. parsley, chopped
1/2 t. onion powder
1 clove garlic, minced
1 t. dried basil
1 t. rubbed sage
salt and pepper, to taste

instructions:

Toast the walnuts in a dry skillet over medium high heat until browned and fragrant, stirring constantly to prevent burning, about 5 minutes.  Remove from pan and set aside.

Place the cider, water, rice, bouillon, parsley, onion powder, garlic, basil and sage into a saucepan set over high heat.  Bring to a boil.  Stir, reduce heat, cover and simmer until liquid is absorbed, about half an hour.  

Season with salt and pepper and stir in the walnuts before serving.
