Hot Honey Pecans, A Book Review and The Weekly Menu #CooktheBooks
Just 2 simple ingredients, 5 minutes of time, and 1 wonderful, healthy snack. These Hot Honey Pecans are great by themselves, a wonderful addition to trail mix, or a delicious topping on salads.
I was inspired to make these pecans while reading Bite by Bite by Aimee Nezhukumatathil.
I had never heard of this author, who normally writes poetry. Aimee is a writer, professor, and mother who shares her fondest food memories with us in this memoir that blends her personal history with botanical and historical facts about numerous foods that have shaped her life.
The proud daughter of a Filipino mother and an Indian father, Aimee shares her culture and heritage in this sampling of short stories that I was surprised to enjoy so much. Each chapter, or short story, is titled with a food. When talking about Pecans, Aimee mentioned being down south for a book signing during a pecan festival and enjoying the Honey Crisp pecans.
I have no idea what Honey Crisp Pecans are, but I had some pecans and some hot honey, and I'm trying to snack a little healthier as a New Year begins, so I put them in a skillet and cooked and stirred over medium-high heat until the honey was absorbed, and the pecans were glazed and toasted. They are amazing. If these are not Honey Crisp Pecans....they should be.
Not a lot on the calendar this week. The Angel Face will be here on Sunday. I have a lunch date with my sister on Tuesday and my sister-in-law on Thursday. Thursday evening, we are meeting the Fontaines for dinner. Frank is taking care of the Dive Shop while the rest of the gang enjoy their Fiji trip.

Hot Honey Pecans

Ingredients
1 c. shelled pecan
2 T. hot honey
Instructions
Place the pecans and honey in a skillet over medium heat.
Cook and stir until the honey is absorbed and the pecans are browned and glazed.
Place onto parchment paper in a single layer to dry completely.
