The 3rd Day of Christmas and a Jalapeno Popper Dip Recipe for #SundayFunday

On the third day of Christmas, I am sharing an easy, make-ahead jalapeno popper dip that is perfect for bringing to that NYE party.  All the flavors that you love in a popper in dip form for scooping onto crackers.

Jalapeno Popper Dip collage

This is a recipe that I make often because I always have the ingredients on hand.  My refrigerator always contains blocks of cheese, including cream cheese.  There is usually a bag or two of shredded cheese in there as well, but if not, I have a shredding plate on my food processor.  

I buy bags of real bacon bits from Costco to keep in my refrigerator. They are great for adding to salads or throwing into an omelet.  They last for a long time, and there is no mess to clean up from frying bacon slices.  If you don't have bacon bits in your refrigerator, just fry up 10 slices of bacon and crumble them.

Mayo and Sour Cream are also always in my refrigerator, but if I run out of Mayo, I have used Miracle Whip with excellent results.  I try to use fresh jalapenos for this dip, but I have been known to use pickled or candied jalapenos if there are no fresh ones in my refrigerator.

I made this dip to take to our Dive Shop Christmas Potluck.  I made it and baked it right in the crock of  my slow cooker, and then transported it in the base, which I plugged in upon arrival to keep it warm, oooey, and gooey.  I served it with a basket of assorted crackers, but sometimes I serve it with tortilla chips.  You could also serve it with bread if you wanted.  

I had several requests for the recipe, so I decided to share it here for today's appetizer theme......

Jalapeno Popper Dip

Jalapeno Popper Dip

 All the flavors that you love in a popper in dip form for scooping onto crackers or tortilla chips.

Ingredients

  • 3/4 c. bacon bits (or 10 slices bacon, fried and crumbled)
  • 8 oz. block of cream cheese, room temperature
  • 1/3 c. mayonnaise
  • 1/3 c. sour cream
  • 2 jalapenos, seeded and finely chopped
  • 3 c. shredded Mexican blend cheese

Instructions

  1. Using a stand mixer, hand mixer, or food processor, combine the cream cheese, mayo, sour cream, 1/2 cup of the bacon, 3/4 of the jalapenos, and 2 1/2 cups of the shredded cheese.
  2. Transfer to a small cast-iron skillet, baking dish, or slow cooker insert, depending on how you want to serve the dip. Sprinkle with the remaining 1/2 c. of cheese and reserved bacon and jalapenos.
  3. Bake in a preheated oven for about 20 minutes until cheese is melted and bubbly. Serve immediately or place the insert in the slow cooker set on warm to serve later.
