When doing my holiday baking, I like to have a large assortment of cookies on my platter, and one of them is always a bar.
In years past, I have shared recipes for Magical Cookie Bars, Toffee Bars, Red Velvet Cookie Bars, and Sadie Snaps, among others. You can find all the cookie bars I had shared by entering cookie bars into the search engine found at the top left of this post.
I decided to make these cookie bars for all the "nutty" people in my life. You know, the people who love nuts of any kind. The original recipe, found in Pillsbury's Bake Off Cookie Book, called for only peanuts. I adapted it and used mixed nuts. They were delicious.

Nut Brittle Cookie Bars
These cookie bars are chock-full of nuts in the batter and on top. They are sure to please the nut lover on your Christmas list.
Prep time: 5 MinCook time: 25 MinTotal time: 30 Min
Ingredients
- 1 c. four
- 1 stick butter, room temperature
- 1/2 c. firmly packed brown sugar
- 1/2 t. cinnamon
- 1/4 t. soda
- 1 egg
- 1 t. vanilla
- 1 c. chopped salted mixed nuts
Instructions
- Place the flour, butter, sugar, cinnamon, baking soda, egg, and vanilla into the large bowl of a stand mixer fitted with the paddle attachment. Beat on low speed until combined, and then increase speed and mix until well blended.
- Stir in 1/2 cup of the nuts and spread the batter into a 9x13" baking pan that has been treated with baking spray. Top with remaining chopped nuts, pressing lightly to adhere.
- Bake in a preheated 325* oven for 20-25 minutes. Cut into bars and let cool in pan before removing.
