Jalapeno Popper Dip
All the flavors that you love in a popper in dip form for scooping onto crackers or tortilla chips.
Ingredients
- 3/4 c. bacon bits (or 10 slices bacon, fried and crumbled)
- 8 oz. block of cream cheese, room temperature
- 1/3 c. mayonnaise
- 1/3 c. sour cream
- 2 jalapenos, seeded and finely chopped
- 3 c. shredded Mexican blend cheese
Instructions
- Using a stand mixer, hand mixer, or food processor, combine the cream cheese, mayo, sour cream, 1/2 cup of the bacon, 3/4 of the jalapenos, and 2 1/2 cups of the shredded cheese.
- Transfer to a small cast-iron skillet, baking dish, or slow cooker insert, depending on how you want to serve the dip. Sprinkle with the remaining 1/2 c. of cheese and reserved bacon and jalapenos.
- Bake in a preheated oven for about 20 minutes until cheese is melted and bubbly. Serve immediately or place the insert in the slow cooker set on warm to serve later.

Baking it and serving it in the slow cooker is genius, Wendy! I fear I could eat that whole pot!
