Cranberry Mousse
This delicious, fluffy mousse delivers a burst of flavor and texture with every bite. Tart cranberries, tangy sour cream, sweet pineapple, and crunchy pecans all swirled together with strawberry jello. Beautiful, seasonal, and scrumptious.
Ingredients
- 1 pkg. (6 oz) strawberry gelatin
- 1 c. boiling water
- 1 can (20 oz) crushed pineapple, drained, juice reserved
- 1 can (14 oz) whole berry cranberry sauce
- 3 T. lemon juice
- 1 t. grated lemon zest
- 1/2 t. ground nutmeg
- 2 c. sour cream
- 1/2 c. chopped pecans
- Whipped Cream for serving, if desired
Instructions
- Dissolve the gelatin in the boiling water in a large bowl. Whisk in the reserved pineapple juice.
- Stir in the cranberry sauce, lemon zest, lemon juice, and nutmeg. Place in the refrigerator until thickened, about 30 minutes.
- Whisk in the sour cream, pineapple, and pecans. Divide between 10 dessert cups, cover with plastic wrap, and chill for at least 2 hours and up to overnight.
- Serve with a dollop of whipped cream if desired.
