I am happy to share this scrumptious, easy cake with you today.  On Monday, I shared a Pumpkin Bread Pudding, and on Friday, I will share a special holiday cocktail.

I adapted this recipe from one found on the Food Network, halving the ingredients to make only 9 servings.

Oatmeal Breakfast Cake

This delicious, moist cake is perfect for a Holiday Breakfast Buffet or just by itself with a cup of coffee, holding you over until dinner is served.

Ingredients

Cake
  • 1 1/2 c. flour
  • 1/2 old-fashioned oats
  • 1/2 c. sugar
  • 1/4 c. brown sugar
  • 1 t. cinnamon
  • 1 t. baking powder
  • pinch of salt
  • 1/4 t. baking soda
  • 1/2 c. vegetable oil
  • 1/2 c. buttermilk
  • 1 t. vanilla
  • 2 eggs
Glaze
  • 1/3 c. brown sugar
  • 1/4 c. old-fashioned oats
  • 1/4 c. sweetened shredded coconut
  • 3 T. butter
  • 2 T. milk
  • 1/2 t. cinnamon
  • pinch of salt
  • 1/4 c. chopped pecans

Instructions

  1. Whisk together the dry ingredients for the cake, flour, oats, both sugars, cinnamon, baking powder, baking soda, and salt in a large bowl.
  2. Whisk together the wet ingredients for the cake, oil, buttermilk, vanilla, and eggs.
  3. Add the wet ingredients to the dry and mix just until combined.
  4. Pour the batter into a 9" baking pan that has been treated with baking spray and bake in a preheated 350* oven for 30-40 minutes, until a skewer inserted in the center removes cleanly.
  5. When the cake is baked, place the glaze ingredients in a small saucepan over medium-high heat. Bring to a boil and cook for about 1 minute.
  6. Pour the hot glaze over the warm cake and spread it over the top. Let cool completely in the pan before serving, about one hour.
