Oatmeal Breakfast Cake
This delicious, moist cake is perfect for a Holiday Breakfast Buffet or just by itself with a cup of coffee, holding you over until dinner is served.

Ingredients
Cake
- 1 1/2 c. flour
- 1/2 old-fashioned oats
- 1/2 c. sugar
- 1/4 c. brown sugar
- 1 t. cinnamon
- 1 t. baking powder
- pinch of salt
- 1/4 t. baking soda
- 1/2 c. vegetable oil
- 1/2 c. buttermilk
- 1 t. vanilla
- 2 eggs
Glaze
- 1/3 c. brown sugar
- 1/4 c. old-fashioned oats
- 1/4 c. sweetened shredded coconut
- 3 T. butter
- 2 T. milk
- 1/2 t. cinnamon
- pinch of salt
- 1/4 c. chopped pecans
Instructions
- Whisk together the dry ingredients for the cake, flour, oats, both sugars, cinnamon, baking powder, baking soda, and salt in a large bowl.
- Whisk together the wet ingredients for the cake, oil, buttermilk, vanilla, and eggs.
- Add the wet ingredients to the dry and mix just until combined.
- Pour the batter into a 9" baking pan that has been treated with baking spray and bake in a preheated 350* oven for 30-40 minutes, until a skewer inserted in the center removes cleanly.
- When the cake is baked, place the glaze ingredients in a small saucepan over medium-high heat. Bring to a boil and cook for about 1 minute.
- Pour the hot glaze over the warm cake and spread it over the top. Let cool completely in the pan before serving, about one hour.
