Leftover Kabob Fajitas #SundayFunday

This delicious meal starts with leftover kabobs.  You can use chicken, beef, or a combination of both.  Slice up the leftover meat and vegetables, place in a crockpot with a package of fajita seasoning and some water, and enjoy your day.  When you are ready to eat, heat up some tortillas, and dinner is served.

I chose this week's theme. As we enter October, here in the Midwest, our temperatures normally start to cool, and my thoughts turn from grilling to comfort foods.  The weather has fooled us here in Michigan, and it feels as warm as if it were midsummer.  It's okay, though, because using a crockpot does not heat up the house at all. 

Since I was going to be traveling home right before this event, my friend Camilla of Culinary Cam took care of the administrative work.  Thanks, Cam.

The weekend before we left for our trip to Italy, we invited the kids to come for dinner.  I ran to the butcher and bought some prepared and marinated kabobs, both beef and chicken, that we grilled up with some sides.

We had a couple of leftover kabobs that I wanted to use before we left, so while I was out running last-minute errands, I put my crockpot to use.  When we got home, all we needed to do was warm up some tortillas and pull out the sour cream and salsa.

Leftover Kabob Fajitas

Wondering what to do with those leftover kabobs in your refrigerator? Remove the skewer, slice the meats and veggies, and pop them into your crockpot with some fajita seasoning. One leftover kabob suddenly feeds a family of four. How wonderful is that?!

Prep time: 5 MinCook time: 4 HourTotal time: 4 H & 5 M

Ingredients

  • One cooked leftover Beef or Chicken Kabob
  • 2 t. Fajita Seasoning
  • 1/4 c. water
  • Warmed tortillas
  • Sour Cream and Salsa, if desired

Instructions

  1. Remove the meat and vegetables from the skewer and cut into slices.
  2. Place into the crock of a slow cooker and season with the Fajita seasoning.
  3. Add 1/4 c. water and cook on low heat for 4 hours.
  4. Serve on warmed tortillas.
  5. Garnish with sour cream and/or salsa, if desired

  1. I don't make kabobs very often but I have leftover roasts, chicken, etc. which I think would work for this as well. Making a mental note for next time!
