You will have made and eaten this dish in less time than it would take to phone and have it delivered.
Pad Thai with extra peanuts, paid for by phone, and dropped at the door upon delivery is the preferred dinner of Lucas, an introvert, who is very happy living his solitary life playing video games, working from home, and ordering takeout to be delivered without contact.
Written in true Backman fashion, this short story had me laughing out loud during my flight from Detroit to LA last month.
At only 68 pages, this is a quick, fun, easy read. Just be warned that if you read it on a flight or in a doctor's office waiting room, you will get many strange looks when you start laughing out loud.

I have so enjoyed having Chuck home this past week and I am happy to report that Frank is getting stronger every day. He can get around well enough that I am heading back to the gym and my old routine. I can't wait to get back into the groove. We go for his follow-up appointment on Thursday and I know he hopes to get the doc's okay to drive again.

Shrimp Pad Thai
This quick dinner is perfect for those days when you walk in the door, starving, but have forgotten to take anything out for dinner.

Ingredients
- 8 oz. pad thai rice noodles
- 2 T. fish sauce
- 3 T. brown sugar
- juice of 2 limes
- 1 serrano chile, minced
- 1/4 c. peanut oil
- 3 shallots, thinly sliced
- 1 T. minced garlic
- 12 oz. raw shrimp, shelled and deveined
- 2 eggs, beaten
- fresh bean sprouts, for serving
- crushed roasted nuts for serving
Instructions
- Bring a large skillet of water to a boil. Turn off heat and add the noodles. Let soak until soft and pliable. Transfer the noodles to a colander to drain.
- Whisk together the fish sauce, brown sugar, lime juice and minced serrano pepper. Set aside.
- Heat 2 Tablespoons of the oil in a wok. Add the shallots and garlic. Cook and stir until lightly browned, 2 or 3 minutes.
- Add the noodles and cook, stirring until heated through, another 2-3 minutes.
- Add the shrimp and cook until they turn pink, push all the ingredients to one side of the wok, and add the remaining oil to the opposite side.
- Add the beaten eggs to the oil and cook, stirring, for about a minute, until just set. Add the fish sauce mixture and toss to coat.
- Divide the Pad Thai between 4 dishes and sprinkle with desired amount of nuts and bean sprouts.
