I had some rhubarb from my garden, that I had chopped and put up in the freezer to make this simple syrup. You can buy frozen rhubarb at many grocers. This recipe is easily adapted to become a cocktail should you wish. Simply add a shot of white gin before filling the glass with soda.

Rhubarb Mint Mojito Mocktail
This delicious, refreshing drink is made by making a simple syrup using rhubarb and mint. Add some lime juice and fill the glass with soda water for a lovely, light mocktail to start off the New Year.

Ingredients
Rhubarb Simple Syrup
- 2 c. chopped rhubarb
- 1/2 c. sugar
- 1/2 c. water
- 1/2 bunch fresh mint
Mocktail or Cocktail
- 3-4 mint leaves
- 1 jigger rhubarb simple syrup
- juice of half a lime
- club soda
Instructions
Rhubarb Simple Syrup
- Place the mint, rhubarb, sugar and water into a small saucepan over high heat. Bring to a boil. Reduce heat to a simmer and cook for about 15 minutes, stirring occasionally.
- Strain through a fine mesh sieve and allow to cool completely.
Rhubarb Mint Mojito Mocktail or Cocktail
- Place the mint into a rock glass and use a muddler or wooden spoon to release the oils from the mint.
- Fill the glass with ice. Add the simple syrup and lime juice. Top with Club Soda and garnish with a lime slice or sprig of mint, if desired.
- If making a cocktail, add a jigger of white rum before topping with Club Soda.
